Ray's Silky Smooth Hummus



Hummus

Serves: 10



Ingredients:

  • 1-(15 oz. can) chickpeas
  • 1/4 cup tahini
  • 2 roasted red peppers (see below)
  • 3-4 roasted garlic cloves
  • 2 teaspoons kosher salt
  • 1 lemon (for juice)
  • Water for texture
  • 1 teaspoon pepper
  • 2 teaspoons paprika
  • 1/4 teaspoon cayenne pepper
  • salt and pepper to taste


Preparation:


      Roasted Red Peppers

  1. Cut red peppers into long sheets, place on tin foil on baking sheet.
  2. Drizzle olive oil, salt, pepper over peppers, use hands to massage into peppers.
  3. Cut top of garlic off (not root) about quarter inch, just enough to expose the inside of most cloves.
  4. Make a tight tin foil bowl around head of garlic. Salt and pepper, then pour 1-2 tablespoons over top.
  5. Cook in 500 degree oven for 30 minutes. (peppers should become blackened)
  6. Remove from oven and immediately cover with tin foil for 30 minutes. (only use flesh of peppers and garlic should slide out of their pods.
      

      Mixing

  1. In blender, add tahini, garlic and peppers.
  2. Pulse for 30-60 seconds.
  3. Add spices and incorporate, then add chickpeas and mix.
  4. Add lemon juice and mix, then add water to desired consistency.
  5. Salt and pepper to taste.
  6. Pour into bowl, and sprinkle with paprika.
  7. Serve with carrots, celery, peppers, pita bread, chips etc.
