Ray's Silky Smooth Hummus

Ingredients:
- 1-(15 oz. can) chickpeas
- 1/4 cup tahini
- 2 roasted red peppers (see below)
- 3-4 roasted garlic cloves
- 2 teaspoons kosher salt
- 1 lemon (for juice)
- Water for texture
- 1 teaspoon pepper
- 2 teaspoons paprika
- 1/4 teaspoon cayenne pepper
- salt and pepper to taste
Preparation:
Roasted Red Peppers
- Cut red peppers into long sheets, place on tin foil on baking sheet.
- Drizzle olive oil, salt, pepper over peppers, use hands to massage into peppers.
- Cut top of garlic off (not root) about quarter inch, just enough to expose the inside of most cloves.
- Make a tight tin foil bowl around head of garlic. Salt and pepper, then pour 1-2 tablespoons over top.
- Cook in 500 degree oven for 30 minutes. (peppers should become blackened)
- Remove from oven and immediately cover with tin foil for 30 minutes. (only use flesh of peppers and garlic should slide out of their pods.
Mixing
- In blender, add tahini, garlic and peppers.
- Pulse for 30-60 seconds.
- Add spices and incorporate, then add chickpeas and mix.
- Add lemon juice and mix, then add water to desired consistency.
- Salt and pepper to taste.
- Pour into bowl, and sprinkle with paprika.
- Serve with carrots, celery, peppers, pita bread, chips etc.
