Elevated Corn Beef Brisket
Corn Beef Brisket & Vegetables

Serves 12
Ingredients:
- 1 corned beef brisket (about 3 lb.) + spice packet
- 1 head green cabbage, quartered
- 1 head purple cabbage, quartered
- 8 red potatoes
- 4 large carrots, washed
Preparation:
- In a 6-quart Dutch oven, place the brisket, and spice packet. Fill with water to cover everything plus one inch.
- Bring to a boil and cook for 20 minutes.
- Skim off any residue that floats to the top.
- Reduce heat to a simmer and cook for 2 to 3 hours, until meat is fork tender.
- Preheat oven to 350 degrees.
- Arrange vegetables on sheet pan and season with salt, place brisket on top of vegetables.
- Cook for 20 minutes.
- Remove from oven and let meat rest for 10 minutes.
- Slice brisket against the grain.
- Serve
