Corn Beef Brisket & Vegetables

Ingredients:

  • 1 corned beef brisket (about 3 lb.) + spice packet
  • 1 head green cabbage, quartered
  • 1 head purple cabbage, quartered
  • 8 red potatoes
  • 4 large carrots, washed


Preparation:

  1. In a 6-quart Dutch oven, place the brisket, and spice packet. Fill with water to cover everything plus one inch.
  2. Bring to a boil and cook for 20 minutes.
  3. Skim off any residue that floats to the top.
  4. Reduce heat to a simmer and cook for 2 to 3 hours, until meat is fork tender.
  5. Preheat oven to 350 degrees.
  6. Arrange vegetables on sheet pan and season with salt, place brisket on top of vegetables.
  7. Cook for 20 minutes.
  8. Remove from oven and let meat rest for 10 minutes.
  9. Slice brisket against the grain.
  10. Serve
