Pad Thai

Ingredients:
1 lb. chicken cut into chunks
8 oz. rice noodles or udon noodles (can also use ramen)
1-1/2 cups of bean sprouts
2 green onion stalks chopped, (green and white parts)
3 eggs
1/2 cup of peanuts
peanut sauce
Preparation:
Heat 3 tbsp. oil into a wok or heavy bottom deep pan over medium-high heat
Add chicken to pan and season with salt and pepper, cook for 6-7 minutes stirring occasionally
Once the chicken is cooked, remove it and place it in a bowl
Add 3 more tbsp of oil to the pan and add noodles and bean sprouts, cook for a few minutes until heated through
Slide mixture to one side and add a little oil to pan and add egg, scramble then combine all ingredients
Add peanut sauce and combine
Add chicken and combine
Top with peanuts and a lime wedge
Serve
