Standing Rib Roast (prime rib)

Ingredients:

  • 1/3 cup Dijon mustard

  • 2 tbsp minced garlic

  • 1 tbsp chopped thyme leaves

  • 2 tsp ground pepper

  • 1 tbsp kosher salt

  • 3 tbsp extra-virgin olive oil

  • 13 lb. prime rib roast

Preparation:

  1. Preheat oven to 225* F

  2. Mix mustard, garlic, thyme, pepper, and 2 tsp of salt in a small bowl and whisk in olive oil

  3. Set the meat, bone side down, in a roasting pan and season it lightly with remaining salt

  4. Roast the meat for three hours or until internal temp reaches 115-120* F

  5. Cover meat and let rest for 45 mins

  6. Preheat broiler and cook meat on top rack under broiler for 15 mins

  7. Since we let the meat rest you can carve/slice it right away

  8. Serve with your favorite side dishes
