Standing Rib Roast (prime rib)

Ingredients:
1/3 cup Dijon mustard
2 tbsp minced garlic
1 tbsp chopped thyme leaves
2 tsp ground pepper
1 tbsp kosher salt
3 tbsp extra-virgin olive oil
13 lb. prime rib roast
Preparation:
Preheat oven to 225* F
Mix mustard, garlic, thyme, pepper, and 2 tsp of salt in a small bowl and whisk in olive oil
Set the meat, bone side down, in a roasting pan and season it lightly with remaining salt
Roast the meat for three hours or until internal temp reaches 115-120* F
Cover meat and let rest for 45 mins
Preheat broiler and cook meat on top rack under broiler for 15 mins
Since we let the meat rest you can carve/slice it right away
Serve with your favorite side dishes
