Chicken Lemon Penne Rigate

Ingredients:
- 2 tablespoons oil
- 1 pound boneless chicken breasts, chopped
- 1 medium onion
- salt and pepper
- 2 garlic cloves, minced
- 2 cups chicken stock
- 2 1/12 cups penne rigate noodles (or pasta of choice)
- 3 tablespoons lemon juice
- 3 cups spinach
- 3 ounces cream cheese
- 1/2 cup mozzarella cheese
- 1/2 cup parmesan cheese
Procedure:
- Add oil to a deep skillet and heat over medium-high heat
- Add onion and cook about 2 minutes
- Add chicken, salt and pepper, cook until chicken is no longer pink
- Add garlic and stock, continue to cook
- Add pasta noodles and stir, cover and simmer over medium-low heat for 20 minutes
- Remove lid and stir
- Add lemon juice and spinach, stir to combine
- Remove from heat
- Add cheeses one by one and stir
- Garnish with lemon zest (optional)
- Serve
