Pork Tenderloin Cutlets

Ingredients:

  • 8 tablespoons oil for frying
  • 1- 1 pound pork tenderloin, cut into six sections, then pounded to 1/2 inch thickness
  • 1 cup all-purpose flour
  • 2 eggs
  • salt and pepper

Procedure:


  1. Heat oil until shimmering over medium heat
  2. Set up dredging station (3 plates, flour, eggs and one for floured pieces), add salt and pepper to flour
  3. Dip pork one by one in flour then egg then back to flour, shake off excess and set on plate
  4. Add to oil and fry for 6-7 minutes then flip and continue to cook for another 6-7 minutes or until golden brown and internal temperature reads 145 degrees
  5. Drain on paper towel lined plate and salt lightly and serve
