Pork Tenderloin Cutlets

Ingredients:
- 8 tablespoons oil for frying
- 1- 1 pound pork tenderloin, cut into six sections, then pounded to 1/2 inch thickness
- 1 cup all-purpose flour
- 2 eggs
- salt and pepper
Procedure:
- Heat oil until shimmering over medium heat
- Set up dredging station (3 plates, flour, eggs and one for floured pieces), add salt and pepper to flour
- Dip pork one by one in flour then egg then back to flour, shake off excess and set on plate
- Add to oil and fry for 6-7 minutes then flip and continue to cook for another 6-7 minutes or until golden brown and internal temperature reads 145 degrees
- Drain on paper towel lined plate and salt lightly and serve
