Grilled Steak & Roasted Vegetables

Ingredients:

  • 2 steaks (such as sirloin or ribeye)

  • 1 medium zucchini, sliced

  • 1 medium yellow squash, sliced

  • 1 red bell pepper, sliced

  • 1 small onion, sliced

  • 1 tablespoon olive oil

  • Salt and pepper to taste

  • 2 cloves garlic, minced

  • 1 sprig of fresh rosemary, finely chopped

Instructions:

  1. Preheat the grill to medium-high heat.

  2. In a large bowl, combine the zucchini, yellow squash, bell pepper, onion, olive oil, salt, pepper, and garlic. Toss to coat the vegetables evenly.

  3. Place the steaks and the vegetables on the grill. Grill the steaks for 4-6 minutes per side, or until the desired doneness is reached. Grill the vegetables for 5-7 minutes, or until they are tender and lightly charred.

  4. Remove the steaks and vegetables from the grill and let the steaks rest for a few minutes.

  5. Chop the vegetables into bite-sized pieces and arrange them on a serving platter. Top with the grilled steaks and sprinkle with the chopped rosemary.
