Chicken & Broccoli Gnocchi Bake (Cheesy)

Preparation:

  • Two chicken breasts cubed or (1 lb. of chicken meat)

  • One head of broccoli chopped to florets or (2 cups of florets)

  • One package of gnocchi or (12 oz of gnocchi)

  • One cup of chicken broth

  • Four ounces of cream cheese, cubed

  • One-half cup of Parmigiano-Reggiano, grated

Ingredients:

  1. Preheat oven to 400* F

  2. Add oil and butter to a cast-iron or heavy bottom oven-safe skillet, and begin to saute’ gnocchi over medium-high heat until lightly browned (about 5 mins)

  3. While gnocchi cooks, steam or boil broccoli until just tender (about 5 mins)

  4. Remove gnocchi from skillet and add chicken, season with salt and pepper, and cook for 5 to 7 minutes until browned, remove and set aside

  5. Add broth to skillet and deglaze

  6. Add cream cheese and stir until smooth

  7. Add all remaining ingredients and stir to combine

  8. Top with grated cheese and bake for 15 minutes

  9. Remove and serve
