Ingredients:

Waffles
  • 2 cups a.p. flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 2 tsp salt
  • 2 large eggs
  • 2 cups milk
  • 1 stick butter (melted)
Chicken
  • 1 whole chicken (cut into 8 pieces)
  • 1 cup buttermilk
  • 2 cups a.p. flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp black pepper
  • 1 1/2 tsp kosher salt, plus more for seasoning
Directions:

Waffles
  1. Preheat oven to 250 degree F
  2. Whisk together the flour, sugar, baking powder and salt in a large bowl and set aside
  3. In another large bowl, whisk the eggs and a pinch of salt until just broken up, then add the milk and whisk. Pour in the melted butter and whisk until combined
  4. Add the wet ingredients to the dry ingredients and stir with a rubber spatula until the flour is just incorporated and no streaks remain. (lumps are okay)
  5. Preheat waffle maker to medium heat. Let batter sit in fridge for ten minutes
  6. Add a cup of batter to iron, close the lid and cook until steam starts to diminish (open top and check for doneness) a few minutes. Transfer to warm oven
Chicken
  1. Heat oil for frying to 370 degree F
  2. Place chicken and buttermilk in a bowl. In a separate bowl, add the flour, garlic, salt, paprika, s&p and mix to combine
  3. Dredge each piece in the flour mix, then be sure to press in the flour for maximum coverage
  4. Let sit for ten minutes before frying 
  5. Add chicken; two pieces at a time, to the oil
  6. Fry pieces two at a time until golden, about 10-12 minutes
  7. Remove chicken to wire rack or paper towel lined object to drain excess grease and sprinkle with salt
