Spicy Chipotle Pork Tacos

Ingredients:





  • 2 tbsp oil (your choice)
  • 1 onion, chopped fine
  • 3 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp allspice
  • 1/2 tsp cinnamon
  • 1/3 cup tomato paste
  • 1 1/2 cps chicken stock
  • 1/4 cup orange juice
  • 5 bay leaves
  • S&P to taste
  • 2 lbs country style pork ribs (boneless)

Directions:


  1. Pre-heat oven to 300 degrees F
  2. Heat oil in heavy bottom pot (or dutch oven)
  3. When heated add onion and cook until lightly browned, 4 to 6 minutes.
  4. Add garlic, cumin, oregano, allspice, and cinnamon and cook until fragrant, about 30 seconds. Stir in tomato paste and cook, stirring constantly, until paste beginds to darken, about 45 seconds.
  5. Stir in stock, o.j., vinegar, worcestershire, bay leaves, and salt & pepper, scraping up any fond.
  6. Add pork and bring to a boil.
  7. Transfer to oven, uncovered, and cook until pork is tender, about 2-1/2 hours, stirring once halfway through cooking.
  8. After letting meat rest until touch, shred with forks and serve with tortillas.
