Spicy Chipotle Pork Tacos

Ingredients:
- 2 tbsp oil (your choice)
- 1 onion, chopped fine
- 3 garlic cloves, minced
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp allspice
- 1/2 tsp cinnamon
- 1/3 cup tomato paste
- 1 1/2 cps chicken stock
- 1/4 cup orange juice
- 5 bay leaves
- S&P to taste
- 2 lbs country style pork ribs (boneless)
Directions:
- Pre-heat oven to 300 degrees F
- Heat oil in heavy bottom pot (or dutch oven)
- When heated add onion and cook until lightly browned, 4 to 6 minutes.
- Add garlic, cumin, oregano, allspice, and cinnamon and cook until fragrant, about 30 seconds. Stir in tomato paste and cook, stirring constantly, until paste beginds to darken, about 45 seconds.
- Stir in stock, o.j., vinegar, worcestershire, bay leaves, and salt & pepper, scraping up any fond.
- Add pork and bring to a boil.
- Transfer to oven, uncovered, and cook until pork is tender, about 2-1/2 hours, stirring once halfway through cooking.
- After letting meat rest until touch, shred with forks and serve with tortillas.
