Baked Beet Chips

Ingredients:
- 3-4 medium beetroots
- 1 tbsp olive oil
- Sea salt & fresh black pepper to taste
Preparation:
- Pre-heat oven to 325 F
- peel beets with a veggie peeler
- slice beets to 1/4 inch thickness with a mandolin. (be extra careful)
- lay beet slices in a single layer on a baking tray covered with parchment paper
- brush olive oil over slices and season with salt and pepper
- bake for 30-40 minutes (time will vary based on how thin they are sliced)
- remove from the oven and let sit on cooling rack for 10 minutes
