Baked Beet Chips

Ingredients:

  • 3-4 medium beetroots
  • 1 tbsp olive oil
  • Sea salt & fresh black pepper to taste

Preparation:

  1. Pre-heat oven to 325 F
  2. peel beets with a veggie peeler
  3. slice beets to 1/4 inch thickness with a mandolin. (be extra careful)
  4. lay beet slices in a single layer on a baking tray covered with parchment paper
  5. brush olive oil over slices and season with salt and pepper
  6. bake for 30-40 minutes (time will vary based on how thin they are sliced)
  7. remove from the oven and let sit on cooling rack for 10 minutes
