Savory Soirée Chicken Wrap

Ingredients:

  • 2 large chicken breasts, boneless and skinless

  • 1 large red onion, thinly sliced

  • 1 large green bell pepper, sliced into strips

  • 2 cups cooked rice (preferably a day old)

  • 1 cup shredded cheese (cheddar or a Mexican blend works well)

  • 1/4 cup sour cream, plus extra for serving

  • 4 large flour tortillas

  • 2 tablespoons olive oil

  • 1 teaspoon of each: cumin, paprika, garlic powder, chili powder

  • Salt and pepper to taste

Preparation:

  • Cut chicken breasts into thin strips and season with cumin, paprika, garlic powder, chili powder, salt, and pepper. Let it marinate for at least 15 minutes.

  • Meanwhile, heat the cooked rice and mix in a pinch of cumin and salt for extra flavor.

  1. Cooking the Filling:

    • In a large pan, heat olive oil over medium heat. Add the chicken strips and cook until they're golden brown and cooked through, about 6-8 minutes.

    • Remove the chicken and set aside. In the same pan, add a little more oil if needed, and sauté the red onion and green bell pepper until they're soft and slightly caramelized, about 5 minutes.

    • Combine the chicken back into the pan with the vegetables and mix well. Adjust seasoning if necessary.

  2. Assembling the Wraps:

    • Lay out the flour tortillas and spread a tablespoon of sour cream on each.

    • Spoon a layer of rice onto the center of each tortilla, followed by the chicken and vegetable mixture.

    • Sprinkle generously with cheese.

  3. Wrapping:

    • Fold in the sides of the tortilla over the filling, then roll tightly from the bottom up to encase all of the ingredients.

  4. Final Cook:

    • Heat a clean pan over medium heat. Place the wraps seam side down to seal them and create a crispy exterior. Cook for 2-3 minutes on each side or until golden brown.

  5. Serving:

    • Slice the wraps in half diagonally and serve with a side of sour cream, and if desired, salsa or guacamole.

    • Garnish with fresh cilantro or a squeeze of lime juice for an added zesty flavor.
