Savory Soirée Chicken Wrap
Ingredients:
2 large chicken breasts, boneless and skinless
1 large red onion, thinly sliced
1 large green bell pepper, sliced into strips
2 cups cooked rice (preferably a day old)
1 cup shredded cheese (cheddar or a Mexican blend works well)
1/4 cup sour cream, plus extra for serving
4 large flour tortillas
2 tablespoons olive oil
1 teaspoon of each: cumin, paprika, garlic powder, chili powder
Salt and pepper to taste
Preparation:
Cut chicken breasts into thin strips and season with cumin, paprika, garlic powder, chili powder, salt, and pepper. Let it marinate for at least 15 minutes.
Meanwhile, heat the cooked rice and mix in a pinch of cumin and salt for extra flavor.
Cooking the Filling:
In a large pan, heat olive oil over medium heat. Add the chicken strips and cook until they're golden brown and cooked through, about 6-8 minutes.
Remove the chicken and set aside. In the same pan, add a little more oil if needed, and sauté the red onion and green bell pepper until they're soft and slightly caramelized, about 5 minutes.
Combine the chicken back into the pan with the vegetables and mix well. Adjust seasoning if necessary.
Assembling the Wraps:
Lay out the flour tortillas and spread a tablespoon of sour cream on each.
Spoon a layer of rice onto the center of each tortilla, followed by the chicken and vegetable mixture.
Sprinkle generously with cheese.
Wrapping:
Fold in the sides of the tortilla over the filling, then roll tightly from the bottom up to encase all of the ingredients.
Final Cook:
Heat a clean pan over medium heat. Place the wraps seam side down to seal them and create a crispy exterior. Cook for 2-3 minutes on each side or until golden brown.
Serving:
Slice the wraps in half diagonally and serve with a side of sour cream, and if desired, salsa or guacamole.
Garnish with fresh cilantro or a squeeze of lime juice for an added zesty flavor.
