Pad Thai

Ingredients:

  • 1 lb. chicken cut into chunks

  • 8 oz. rice noodles or udon noodles (can also use ramen)

  • 1-1/2 cups of bean sprouts

  • 2 green onion stalks chopped, (green and white parts)

  • 3 eggs

  • 1/2 cup of peanuts

  • peanut sauce

Preparation:

  1. Heat 3 tbsp. oil into a wok or heavy bottom deep pan over medium-high heat

  2. Add chicken to pan and season with salt and pepper, cook for 6-7 minutes stirring occasionally

  3. Once the chicken is cooked, remove it and place it in a bowl

  4. Add 3 more tbsp of oil to the pan and add noodles and bean sprouts, cook for a few minutes until heated through

  5. Slide mixture to one side and add a little oil to pan and add egg, scramble then combine all ingredients

  6. Add peanut sauce and combine

  7. Add chicken and combine

  8. Top with peanuts and a lime wedge

  9. Serve
