Roast Pork Loin

Ingredients:
- 2 -3 lb. boneless pork loin
- 1 white onion (sliced thin)
- 2-3 sprigs of thyme
- 2-3 sprigs of Rosemary
- 2 tsp salt
- 1tsp pepper
- 1 tsp garlic powder
- Oil for rub
- 1/4 cup apple cider vinegar
Directions:
- Preheat oven to 450 degree F
- Add sliced onions to roasting pan
- Pour vinegar over onions, add thyme
- Rub pork with oil and seasoning and top with Rosemary
- Place on top of bed of onions and roast until just brown
- Turn heat down to 350 degree F and cook for another hour or so until thermometer reads 165 F
- Let rest for ten minutes before slicing
- Serve with your favorite sides
