Ingredients:
Waffles
- 2 cups a.p. flour
- 2 tbsp sugar
- 2 tsp baking powder
- 2 tsp salt
- 2 large eggs
- 2 cups milk
- 1 stick butter (melted)
Chicken
- 1 whole chicken (cut into 8 pieces)
- 1 cup buttermilk
- 2 cups a.p. flour
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp black pepper
- 1 1/2 tsp kosher salt, plus more for seasoning
Directions:
Waffles
- Preheat oven to 250 degree F
- Whisk together the flour, sugar, baking powder and salt in a large bowl and set aside
- In another large bowl, whisk the eggs and a pinch of salt until just broken up, then add the milk and whisk. Pour in the melted butter and whisk until combined
- Add the wet ingredients to the dry ingredients and stir with a rubber spatula until the flour is just incorporated and no streaks remain. (lumps are okay)
- Preheat waffle maker to medium heat. Let batter sit in fridge for ten minutes
- Add a cup of batter to iron, close the lid and cook until steam starts to diminish (open top and check for doneness) a few minutes. Transfer to warm oven
- Heat oil for frying to 370 degree F
- Place chicken and buttermilk in a bowl. In a separate bowl, add the flour, garlic, salt, paprika, s&p and mix to combine
- Dredge each piece in the flour mix, then be sure to press in the flour for maximum coverage
- Let sit for ten minutes before frying
- Add chicken; two pieces at a time, to the oil
- Fry pieces two at a time until golden, about 10-12 minutes
- Remove chicken to wire rack or paper towel lined object to drain excess grease and sprinkle with salt
