Baked Bread

Stand Mixer White Bread

Servings: 10 [1(9-inch) loaf]
                 8 buns




Ingredients:

  • 3 to 3 1/4 cups unbleached all-purpose flour (bread flour is preferable)
  • 2 tablespoons granulated sugar
  • 2 1/4 teaspoons yeast
  • 1 teaspoon salt
  • 1 1/4 cups milk
  • 2 tablespoons butter or shortening

Directions:

  1. Place 2 1/2 cups flour, sugar, yeast ans salt in mixer bowl.
  2. Attach paddle to mixer.
  3. Turn mixer on low and combine flour mixture for 1 minute.
  4. Measure milk in 2 cup glass measure; add butter.
  5. Microwave on High for 75 to 90 seconds or until milk is very warm (120* to 130*F).
  6. Add to flour mixture.
  7. Beat on low for 2 minutes or until mixture is smooth.
  8. Turn mixer off; remove paddle and replace with hook.
  9. Add flour, 1/4 cup at a time until the mixture begins to cling to the dough hook and pull away from the bowl (about 4 minutes).
  10. Continue beating with the dough hook on low for 7 to 10 minutes.
  11. When dough is elastic and smooth, place in a large bowl that has been lightly coated with butter or oil.
  12. Turn once to coat the top of the dough.
  13. Cover bowl with plastic wrap.
  14. Place in a warm place to rise (proof) until dough tests ripe or is about doubled in size.
  15. Punch down; let rest 10 minutes.
  16. Meanwhile, lightly grease a loaf pan (approx. 9x5).
  17. Roll dough into a 7x9-inch rectangle, or 8 balls.
  18. Beginning on the 7-inch, roll up tightly and place in loaf pan, or place balls on lined baking sheet.
  19. Cover and let rise again until imprint from a light touch remains on the side of the loaf.(about 30 minutes).
  20. Bake at 375*F for 35 to 40 minutes or until bread sounds hollow when you tap the tops with your fingers.
  21. Immediately remove from pan.
  22. Cool on wire racks. Let completely cool before slicing.
