Chicken Lemon Penne Rigate

Total: 30 minutes


Serves 2









Ingredients:




  • 2 tablespoons oil
  • 1  pound boneless chicken breasts, chopped
  • 1 medium onion
  • salt and pepper
  • 2 garlic cloves, minced
  • 2 cups chicken stock
  • 2 1/12 cups penne rigate noodles (or pasta of choice)
  • 3 tablespoons lemon juice
  • 3 cups spinach
  • 3 ounces cream cheese
  • 1/2 cup mozzarella cheese
  • 1/2 cup parmesan cheese




Procedure:




  1. Add oil to a deep skillet and heat over medium-high heat
  2. Add onion and cook about 2 minutes
  3. Add chicken, salt and pepper, cook until chicken is no longer pink
  4. Add garlic and stock, continue to cook
  5. Add pasta noodles and stir, cover and simmer over medium-low heat for 20 minutes
  6. Remove lid and stir
  7. Add lemon juice and spinach, stir to combine
  8. Remove from heat
  9. Add cheeses one by one and stir
  10. Garnish with lemon zest (optional)
  11. Serve
