Slow Cooker Turkey & Bean Soup

Total: 8 hrs 20 mins

Makes 8 servings (3 quarts)


Ingredients:

  • 2 tbsp oil
  • 1 lb ground turkey
  • 1 lb turkey breasts, sliced thin
  • 3 1/2 cups beef broth
  • 1 can of chickpeas (32 oz can), drained
  • 1 Vidalia onion, chopped
  • 4 garlic cloves, minced
  • 1 jalapeno pepper, stems and seeds removed , cut in two sections
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tbsp cumin
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • parsley for garnish


Procedure:

  1. Add oil to skillet and heat over med-high heat
  2. When oil is shimmering add ground turkey, and let sit 2 minutes until a sear is created; then break the meat up and cook until brown, about 5 minutes; remove and set aside in a dish
  3. Add jalapeno to skillet and sear for 1 minute on each side, remove and sit with ground meat 
  4. Add onions to the skillet and cook for a few minute until soft, add spices and garlic
  5. Add turkey breasts and cook until no longer pink, about 3 minutes
  6. Spray slow cooker with cooking spray
  7. Transfer all ingredients to slow cooker, stir and cover with lid
  8. Cook on low for 8 hours
  9. Top with parsley, {sour cream, cheese}optional
