Slow Cooker Turkey & Bean Soup

Makes 8 servings (3 quarts)
Ingredients:
- 2 tbsp oil
- 1 lb ground turkey
- 1 lb turkey breasts, sliced thin
- 3 1/2 cups beef broth
- 1 can of chickpeas (32 oz can), drained
- 1 Vidalia onion, chopped
- 4 garlic cloves, minced
- 1 jalapeno pepper, stems and seeds removed , cut in two sections
- 1 tsp oregano
- 1 tsp thyme
- 1 tbsp cumin
- 1/4 tsp salt
- 1/4 tsp pepper
- parsley for garnish
Procedure:
- Add oil to skillet and heat over med-high heat
- When oil is shimmering add ground turkey, and let sit 2 minutes until a sear is created; then break the meat up and cook until brown, about 5 minutes; remove and set aside in a dish
- Add jalapeno to skillet and sear for 1 minute on each side, remove and sit with ground meat
- Add onions to the skillet and cook for a few minute until soft, add spices and garlic
- Add turkey breasts and cook until no longer pink, about 3 minutes
- Spray slow cooker with cooking spray
- Transfer all ingredients to slow cooker, stir and cover with lid
- Cook on low for 8 hours
- Top with parsley, {sour cream, cheese}optional
